Once at the winery, grapes are pressed then cold settled for 72 hours before the fermentation is allowed to begin. This is the dryest Gewürztraminer Banyan has ever made at about 0.3% residual sugar. The end result is still a subtle, but distinctly aromatic wine that has only a touch of sweetness still representing the variety without being cloying.
